A PRESTIGIOUS PARTNERSHIP

I can still recall the excitement in the office following a Friday afternoon phone call from group Executive chef, John Walton, asking if we would be interested in working with the Ainsworth Collection on their forthcoming kitchen refurbishment at The Mariners in Rock. The Mariners is located across the estuary from the rest of the company’s eateries in Padstow, Cornwall. We were already familiar with the pub due to following its recent transformation on Instagram.

Now, it would be an understatement to say that even before the install at The Mariners had begun I had one eye on the proximity of a certain neighbour and what an unbelievable opportunity it would be to showcase our quality and craftsmanship in full view at their much loved local pub and it was extremely pleasing that this came to fruition.

‘Ainsworth’ is a name synonymous with high quality hospitality, and we were eager to work alongside such a prestigious brand. We jumped at the chance for a meeting with John on site in what was then the previous kitchen.

Paul and his team had already perfected a menu that worked perfectly with the venue and its surroundings. It was time to create a kitchen that would allow them to execute this menu with greater ease. With this in mind, we set about designing a ‘best in class’ kitchen.

Each item on the menu had to be carefully considered, from preparation during mise en place to storage. We designed individual chilled drawers for ingredients, placing them close to the cooking appliances. The limited space was addressed by adding a peninsula counter for cold and ambient storage, as well as integral deep fryers and induction hobs for the oyster section.

We designed and manufactured a bespoke yet simple ventilation system in-house. The system had to blend in with the area and meet the approval of overlooking residents.

Trust was essential for this project. We are proud that Paul, Emma, John, and Chef Director Joe and his team are still pleased with the results. The project was completed ahead of schedule and within budget.
