THE CHALLENGE
Adam got in touch with Greens following a recommendation given to him on Twitter by a much-treasured customer of ours, Chef Karim Maoui. Karim, who has been responsible for many projects coming our way through his kind endorsements, is now the performance Chef at Hull City Football Club and an award-winning knife designer.
The Handling Group had only recently refurbished the kitchens at their Michelin-starred flagship restaurant ‘Frog’ in London’s Covent Garden. Unfortunately, they were already experiencing problems. The kitchen’s layout didn’t suit their menu or service style. Additionally, the equipment installed by the previous company was substandard, poorly installed, and causing electrical issues throughout the building.
THE GREENS SOLUTION
We redesigned the kitchen based on the restaurant’s service style, menu, and team. We presented Adam and his team with 3D visuals to illustrate our proposed design and demonstrate how the kitchen would function efficiently. We incorporated final adjustments and personalized design elements before signing off.
TIME-CRITICAL EXECUTION
We planned meticulously to achieve an incredible feat within tight deadlines – the business having a limited down time of 12 days. In just 10 days, Greens completed a full rip-out and reinstatement of walls, flooring, a custom-built cooking suite, and all associated prep counters that were welded and polished on-site. Prioritising time-management throughout the process ensured the restaurant suffered minimal closure and could quickly resume operations.
THE RESULT
The final installation mirrored the proposed design with almost picture-perfect accuracy. The optimised layout and equipment significantly improved efficiency, allowing the Frog team to excel in a flawlessly functioning kitchen. Most significantly, Adam Handling was thrilled with the outcome, Furthermore, the success of this project led to another project at Adam’s award-winning pub, ‘The Loch & The Tyne’ in Old Windsor.
